Light, Crisp & Refreshing — With a Wild Fruit Vinegar-Miso Twist
Sometimes the simplest ingredients make the most refreshing dishes! This colorful Violet Daikon & Celery Salad brings together the satisfying crunch of fresh vegetables, the delicate umami of Japanese bonito flakes (katsuobushi), and a tangy-sweet drizzle of homemade Wild Fruit Vinegar-Miso Dressing.
It's light, crisp, and wonderfully refreshing—a delightful little side dish inspired by Japanese home cooking.
A Little Color, A Lot of Crunch!
Daikon radish is a familiar ingredient in Japanese cuisine, appreciated for its mild peppery flavor and crisp texture. While traditional white daikon works beautifully, we chose violet (purple) daikon for its vibrant color and visual appeal.
Paired with fresh celery, it creates a colorful combination of complementary flavors and textures.
The secret to preparing this salad is a quick salt massage, a simple technique often used in Japanese vegetable preparation.
Gently rubbing the julienned vegetables with sea salt draws out some of their moisture, slightly softening them while preserving their pleasant crunch.
Julienned Violet Daikon & Celery Salad Recipe
Ingredients
Violet (purple) daikon radish, peeled
Fresh celery stalks
Sea salt, for massaging
Katsuobushi (dried bonito flakes), to taste
Shichimi (Japanese seven-spice seasoning), optional
Homemade Wild Fruit Vinegar-Miso Dressing, for drizzling
Adjust the vegetable quantities to suit the number of servings.
Directions
Prepare the vegetables. Peel the violet daikon and cut it into thin, uniform julienne strips. Julienne the fresh celery into similarly sized strips.
Salt and massage. Place the vegetables in a bowl, sprinkle lightly with sea salt, and gently rub the salt into them with your hands. This encourages a slight wilt while maintaining their crisp texture.
Let them rest. Allow the salted vegetables to sit for approximately 2–3 minutes.
Rinse thoroughly. Rinse the vegetables under cool running water to remove the excess salt, then drain well.
Add the finishing touches. Arrange the daikon and celery on a serving plate and sprinkle with katsuobushi flakes. Add a light dusting of shichimi if you enjoy a little extra spice.
Dress and enjoy! Finish with a drizzle of homemade Wild Fruit Vinegar-Miso Dressing, tossing lightly if desired.
The Finishing Touch: Wild Fruit Vinegar-Miso Dressing
What takes this simple salad to another level is the dressing!
Made with homemade white miso, honey, and fruit-scrap vinegars crafted from wild-harvested grapes and mulberries, our Wild Fruit Vinegar-Miso Dressing brings a delicious balance of flavors:
Tangy notes from the wild fruit vinegars
Gentle sweetness from honey
Savory umami from homemade white miso
Combined with the crisp daikon and celery, the dressing adds just enough richness and acidity without overwhelming the fresh vegetables.
